Annatto

Annatto is a natural food colorant that is derived from the seeds of the achiote tree (Bixa orellana), which is native to Central and South America. It is also known as E160b in the European Union, and as "achiote" or "achiote paste" in Latin America.

Annatto has a deep orange-red color and is commonly used in Latin American, Caribbean, and Filipino cuisines as a coloring agent for rice, stews, sauces, and meats. It is also used in the manufacturing of dairy products such as cheese, butter, and yogurt to give them a yellow or orange hue.

Annatto is considered a natural ingredient and is generally recognized as safe by regulatory agencies. It contains carotenoids, including bixin and norbixin, which are powerful antioxidants that have been shown to have anti-inflammatory and anti-cancer properties. Annatto is available in various forms, including powder, paste, and oil, and can be found in many specialty food stores and online retailers.
